1 (16oz) pkg. lasagna noodles
2 qts spaghetti sauce
1 lb Italian sausage
2 (15oz) containers Ricotta cheese
1 egg, beaten
2 tablespoons chopped fresh parsley (or 1 tablespoon parsley flakes)
1/4 teaspoon nutmeg
1 teaspoon sugar
salt & pepper
2 cups shredded mozzarella cheese
1/2 cup parmesan cheese

Remove casings from sausage and crumble as you brown it for about 20 minutes. Set aside.
If using regular pasta, parboil a few strips at a time in salted boiling water for about 7 minutes. Stir gently to prevent sticking. Remove and put in cold water to stop cooking. You could also spread on waxed paper in single layer.
In a large bowl, mix the Ricotta, egg, parsley, nutmeg, sugar, salt and pepper.
Pour 1/2 cup sauce in the bottom of 9x13 pan, then a layer of pasta, 1/3 of Ricotta mixture, 1/3 of mozzarella and 1/3 sausage. Repeat layers ending with sauce and covering completely. Top with Parmesan cheese.
Cover with foil and bake at 375º for 40-45 minutes. Remove foil and bake for 15 minutes more. Let stand for 10-15 minutes before cutting.
