1/4 cup sugar
2 tablespoons salad oil
2 tablespoons water
1/4 cup cornstarch

Beat egg fluffy with beater on low speed.

Gradually beat in sugar; beat until very light and thick.

Fold in oil.

Blend cornstarch into water, adding a little egg-sugar mixture. Fold into remaining egg-sugar mixture.

Heat a well seasoned griddle to 350º. Do not let the griddle get to hot.

Drop a heaping tablespoon of batter onto the griddle and spread to a 4" diameter. Cook for 5-8 minutes until the edges brown and the cookie lifts easily from the griddle. If the cookie sticks, cook longer. Turn, cook on the other side until light brown. Remove from the griddle and keep flat.

Place fortune on flat cookie. Fold two of the opposite sides to center and overlap to cover the fortune. Keep overlapped side up, bend the cookie backward across the middle until the ends just meet. Let stand in small glass or other container until cold.

Stir batter before making each cookie as batter separates on standing.

Makes about 1 dozen cookies.
