1 pound beef steak
4 tablespoons soy sauce
1 tablespoon cornstarch
1 teaspoon sugar
1 tablespoon sherry
1 slice ginger root
4 tablespoons oil
1/2 teaspoon salt
1/2 pound pea pods

Directions:
Directions:
Cut beef across the grain into thin 1/2" slices about 2" long.

Mix sliced beef with soy sauce, cornstarch, sherry, and sugar and set aside.

Remove stems and strings from pea pods. Rinse and dry with towel.

Put 2 tablespoons of oil in a hot skillet over a high flame. Add salt first and then pea pods, stirring constantly until the pea pods turn darker green (less than 1 minute). Remove pea pods and spread on a plate.

In the same pan, add the remaining oil and ginger root. Stir in the beef mixture and turn constantly until beef is almost cooked (not more than 2 minutes). Add pea pods and mix thoroughly. Do not overcook. Serve immediately,.
