3/4 cup flour
1/2 tsp salt
1 tsp sugar
3/4 cup milk
2 egg yolks, slightly beaten
1 tbsp oil

Directions:

Sift together the flour, salt and sugar.
Stir in milk, egg yolks and oil

Pour into a small deep bowl or cup and let it stand for several hours so that the air bubbles will disappear.

Put enough vegetable oil in a small heavy pan to cover the iron completely. Put the iron into the col fat and heat to 375º. Lift out the iron, drain it slightly on a paper towel and dip it into the batter about 3/4 of its depth. Put the iron back into the hot oil and hold until it releases the cookie. When lightly browned remove the cookie from the oil and drain on paper towels, sprinkle with sugar, cinnamon sugar or powdered sugar while warm.

Store in an airtight container.
