Grandma Hahn's Hot Cross Buns Recipe

1 package dry granular yeast
¼ cup warm water
¾ cup milk
1/3 cup sugar
½ cup margarine
½ tsp salt
4 cups sifted all-purpose flour
1 tsp cinnamon
¼ tsp ground cardamom (optional)
1 egg
½ cup currants
½ tsp allspice
1 egg white lightly beaten

Soften yeast in warm water (105°F -115°F). Scald milk; add sugar, margarine, and salt. Cool to lukewarm. Stir in yeast mixture. Sift together flour, cinnamon, allspice, and cardamom. Add half of flour mixture to yeast mixture. Beat well. Blend in egg and currants. Add remaining flour mixture and stir to make soft dough. Place dough onto a lightly floured pastry cloth or board. Knead until smooth and elastic.

Place dough in a lightly greased bowl. Turn dough over to grease surface. Cover and let rise until double in bulk. Punch down, turn and let rise again.

Divide dough into 24 equal sized pieces. Form each into a round bun, tucking edges underneath. Place on a greased baking sheet. Brush tops of buns lightly with beaten egg whites. If desired, cut crosses with knife or scissors. Let rise until double in bulk.

Bake in hot oven at 400°F for 12-15 minutes. Decorate with frosting crosses while buns are still warm. To make crosses add about 1 ½ cup sifted confectioners’ sugar to remaining egg white to make a thick frosting (or use milk instead of egg white.) Pipe crosses onto buns.

*To prepare ground cardamom, remove seeds from about four pods and grind with a mortar and pestle. Discard pods.
