4 c. flour
4 tsp baking powder
1 tsp salt
3 TBSP sugar
1 1/4 c. buttermilk
4 TBSP melted butter
2 large eggs

Directions:
In large bowl, combine flour, baking powder, baking soda, salt and sugar. Stir in buttermilk, butter and eggs just until flour mixture is moistened.

Stir in berries if you are using them having sprinkled them with a little flour first.

Lightly grease griddle over medium heat

Drop batter by 1/4 c, onto hot griddle, spreading gently to make 4" rounds. Cook pancaked 2-3 minutes, turn over and cook 1-2 mins longer.

Transfer to 200º oven to keep warm while the rest of the batter is cooked.

Serve hot with warm maple syrup and fruit if desired.

These ingredients are meant to serve a large group but can easily be halved. I make these regularly and always when Maggie and Violet are with us. We have enjoyed having these with Justin and our great-grandchildren, Jemma and Alec, on Saturday mornings as well.
