1/2 cup sugar
1 tbsp corn starch
1/4 tsp ground cinnamon
4 cups peeled, sliced peaches (6 medium)
1 tsp lemon juice

3 tbsp shortening
1 tbsp flour
3 tbsp sugar
1 and 1/2 tsp baking powder
1/2 tsp salt
1/2 cup milk

Preheat oven to 400º. In medium saucepan on medium heat, mix sugar, cornstarch, cinnamon, stir in peaches and lemon juice. Cook stirring constantly until mixture thickens and boils. Boil and stir for 1 minute. Pour into ungreased large casserole dish, keep mixture hot in oven and prepare topping immediately. Cut shortening into flour, add sugar, baking powder and salt. Use two knives and crisscross mixture until it looks like fine crumbs. Stir in milk. Drop dough by 6 spoonfuls onto hot peach mixture. Bake for 25 to 30 minutes or until topping is golden brown. Serve warm if desired with with sweetened whipped cream or vanilla ice cream.
