Cottage Pie Recipe

1lb ground beef
1 clove garlic, chopped
1 large onion, chopped
2 carrots, trimmed and diced
2 tbsp. plain flour
3 beef bouillon cubes
2 cups hot water
1 tbsp. tomato puree
salt and freshly ground pepper
grated cheddar cheese

For the mash:
1lb potatoes, peeled and cut into chunks
knob of butter

Directions:

1. Heat a large non-stick frying pan and add the ground beef. Fry for 6mins, stirring occasionally, until browned. Drain the fat. Add the garlic, onion and carrots cook for a further 2mins. Stir in the flour and cook for 1 min.
2. Add the hot water and bouillon cubes to the pan, stirring, then add the Worcestershire sauce and tomato puree. Season with black pepper. Bring to the boil and simmer for 10-15mins, removing the lid for the final 5mins.
3. Meanwhile, cook the potatoes in a large pan of lightly salted water for 15mins or until tender. Drain well then mash with the butter. Season with black pepper. Cover and set to one side.
4. Spoon the mince into a large shallow dish, then top with the potato mash, smoothing the surface. Sprinkle the grated cheddar cheese on top. Place under a pre-heated broiler for 4-5 mins or until the top is golden brown.
Serve hot with steamed vegetables.

You can also add 3 carrots, cut into chunks to the mash. Cooking the carrots with the potatoes.
And for a change, don't use mash and simply boil small skinned potatoes. Butter and sprinkle with chopped mint and serve with the ground beef mixture along with a side of peas.

This dish freezes well for up to 3 months. Once thawed thoroughly, place in the oven at 200 degrees for 25mins.

This is a typical British dish, cottage pie with ground beef or shepherd's pie with ground lamb.
