Ingredients: 6 potatoes 1 lb salt codfish, watered overnight. Then cooked and shredded. 1 small onion, grated 1 egg pepper to taste

Directions:Boil potatoes until done, about 20 mins Cook fish in small amount of water until done, about 15 mins. Grate onion 1 egg
Mix all together with clean hands and form into cakes. Place 1/2 c. flour on a dish or sheet of waxed paper and roll formed cakes until each is coated. Try to avoid having them drenched in flour though. Heat olive oil and 1-2 TBSP of butter for flavor. Carefully fry until golden brown on each side. Turn carefully or they will crumble. |

Notes: Carl makes the best fish cakes and enjoys doing it. We make them for all our sons when they come to visit and they are always a hit. We took a dozen with us to Fiddler Lake in Quebec one summer when we joined Shawn and Sheldon and their families for a few days at a lovely resort. Carl loves to have baked beans with them and always serves them with a dollop of mustard.
