6 potatoes
1 lb salt codfish, watered overnight. Then cooked and shredded.
1 small onion, grated
1 egg
pepper to taste

Directions:
Directions:
Boil potatoes until done, about 20 mins
Cook fish in small amount of water until done, about 15 mins.
Grate onion
1 egg

Mix all together with clean hands and form into cakes.
Place 1/2 c. flour on a dish or sheet of waxed paper and roll formed cakes until each is coated. Try to avoid having them drenched in flour though.
Heat olive oil and 1-2 TBSP of butter for flavor.
Carefully fry until golden brown on each side. Turn carefully or they will crumble.

Carl makes the best fish cakes and enjoys doing it.
We make them for all our sons when they come to visit and they are always a hit. We took a dozen with us to Fiddler Lake in Quebec one summer when we joined Shawn and Sheldon and their families for a few days at a lovely resort.
Carl loves to have baked beans with them and always serves them with a dollop of mustard.
