1/2 c. butter
1/2 c. sugar
5 TBSP cocoa
1 tsp vanilla
1 egg
2 c. graham cracker crumbs
1 c. shredded coconut
1/2 c. chopped nuts

Directions:
Directions:
Sit bowl in hot water. Stir in 1st 5 ingredients well until mixture resembles custard. Remove bowl from water and add crumbs, coconut and nuts.
Pack into an 8x8 lightly greased pan,

Dissolve 2 TBSP custard powder in 3 TBSP milk. Cream in 1/4 c. softened butter, 2 c. icing sugar, 1/2 tsp salt. Spread over first mixture and chill 15 mins. Melt 4 semi-sweet squares of chocolate with 1 TBSP of butter. Spread over bottom mixture while still hot.
Cool. Refrigerate.

This is Helen Westington's recipe for a much loved Christmas cookie. This was one of the cookies my Mom made each Christmas. She would sometimes put a little peppermint flavoring in the custard layer and I often do the same for variety. Sheldon loves these.
