Stuffed Bell Peppers Recipe

2 cups cooked white rice
1 lb ground beef
1/2 lb loose pork sausage
1/2 medium onion, chopped
1/2 cup chopped bell pepper (I use the caps from my peppers)
Salt and pepper to taste
Ketchup
57 Sauce
8 medium to large bell peppers

Directions:
Directions:
Cut the caps off the bell peppers, remove seeds and white membranes. Place peppers in a large pot of boiling salted water. Boil for 3 minutes, remove peppers, drain them and set aside to cool.

In saute pan, cook ground beef, sausage, onions and chopped peppers until meat is no longer pink, drain.

In large bowl, mix rice, beef mixture, *ketchup, 57 sauce, salt and pepper (to taste). Mix well, spoon into peppers. **Top each pepper with ketchup. Place stuffed peppers into baking dish. Bake 350 degrees for 30 minutes.

* I sometimes substitute 1 can sloppy joe mix for ketchup and 57 sauce.
** Before topping the stuffed peppers with ketchup, peppers may be wrapped and frozen for up to 3 month.
