2 Tbsp sugar
1 tsp salt
1 pkg dry yeast
5 C flour
1 1/2 C milk
1/4 C oleo
1 egg
1/2 C cornmeal (approx.)

Directions:
In large bowl, combine sugar, salt, yeast & 1 1/2 C flour.
In saucepan over medium heat, heat milk & oleo until very warm (120º to 130º) Oleo does not need to melt completely.
With mixer at low speed, gradually beat liquid into dry ingredients until just blended. Increase speed to medium; beat 2 minutes, occasionally scraping bowl with rubber spatula.
Gradually beat in to mixture: egg with 1 C flour, continue beating 2 minutes.
With spoon, stir in enough flour (about 2 C) to make a stiff dough.
Knead about 2 minutes.
Place in greased bowl and let rise until doubled in size.
Punch down dough and place on surface sprinkled with cornmeal, cover with bowl and let rest 15 minutes.
Roll dough about 3/8" thick, cut circles with round cutter and place on cookie sheets to rise until doubled (cover with towel).
Lightly brush electric skillet with salad oil and bring to medium heat.
Cook circles about 10 minutes on each side.
Cool in wire rack.

First ate these delicious muffins in 1973 and Susan was holding the recipe close to her heart & family. So thankful she's sharing now since I can't get to TN to have them as often as I would like.
