Lemon Bread Recipe

2 TBSP butter
1 c. sugar
2 eggs
1 1/2 c.flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 c, finely chopped nuts (walnuts or pecans)

1 lemon grated and juiced

Directions:

Beat butter and sugar well until sugar is all incorporated. Add eggs, one at a time, beating well.

Sift dry ingredients together and toss with the 1/2 c. nuts and 1 tsp grated lemon peel.
Add to egg mixture alternately with 1/2 c. milk.

Bake at 325 for 1 hour.
Cool on rack for 10 minutes

MIX: 1/3 c. sugar
3 TBSP lemon juice
1 tsp grated lemon rind

Prick loaf with fork in several places. Pour glaze over hot loaf and finish cooling.

Place loaf on a rack with wax paper underneath before glazing to catch the drips. I scrape those up and put them right back on!

Everyone likes this loaf. It keeps well, freezes well and is lovely to serve with tea. I remember helping my Mom make this as a child.
