2 lbs. lean ground beef
1/2 c. finely diced onion
1 c. beef bouillon
3/4 c. seedless raisins
1 large tart apple chopped (I use Granny Smith)
1 pk. wild and long grain rice (cook as per package directions)
1 1/2 c. white rice (cooked) can use a pack of Minute Rice
2 pks frozen peas (cooked)
salt, pepper and curry powder to taste.

Brown meat in unsalted butter.
Add onion and bouillon, chopped apples and raisins
Add seasoning and curry powder. Here you will need to gauge the "heat" of the curry. Begin with 1 TBSP, increasing as necessary until desired "heat" is reached. Curry powder MUST be well cooked into the meat to develop it's full flavor so remember that when adding more.
COVER AND COOK OVER LOW HEAT while next ingreds are prepared.

Cook rice as directed on package about 25 mins. Cook Minute Rice so that both rice dishes are completed at same time.
Cook peas (barely cooked) at same time as rice. (I do in microwave for 1 minute)
Combine ALL ingredients in large casserole (about 3 qt) adding water from rice if it is too dry.
Bake covered at 325 for 30-35 minutes to allow flavours to mingle.

I acquired this recipe more than 40 years ago at the Grand Falls House where it was served at a large function to which I was invited. The chef kindly shared this wonderful recipe and I've made it a number of times for special occasions. It is time-consuming to make but my guys liked it and still ask for it. Now they can make it themselves and impress their friends!
