4 TBSP butter
2 TBSP flour
1 tsp salt
1 tsp pepper
2 c. milk
2 1/2 c. fish, cooked, cooled and flaked
1 c. grated cheddar cheese
1 lemon

Directions:
Directions:
Melt butter, add flour, salt and pepper. Stir to make a paste. Add milk and cook until thick, stirring constantly. Add cheese and stir until melted. Fold fish into sauce, add juice of 1/2 lemon and pour into a greased 1 1/2 qt casserole. Top with grated parmesan cheese and squeeze a little more lemon juice over top.

Bake at 350 for 1/2 hour.
