10 cups water
1 1/4 tsp salt
6 cps medium egg noodles

1 tbsp cooking oil
1 1/2 lbs boneless, skinless chicken breast halves cut into 1/2 inch strips

2 tbsp butter (or hard margarine)
1/2 cp fine dry bread crumbs (I use Panko)

3 tbsp butter (or hard margarine)
1/4 cp all purpose flour

3 3/4 cps milk

2 cps grated gruyere or Swiss cheese

6 oz deli (or Black Forest ham) chopped

Directions:
Combine water and salt in Dutch oven or large pot. Bring to a boil. Add noodles. Boil, uncovered, for about 4 minutes, stirring occasionally, until tender but firm. Drain. Return to same pot. Cover to keep warm.

Heat cooking oil in large frying pan on medium. Add chicken. Cook for about 10 minutes, stirring occasionally, until browned. Remove to plate.

Melt first amount of butter in medium saucepan on medium. Add bread crumbs. Stir well. Transfer to small bowl. Wipe saucepan clean.

Melt second amount of butter in same saucepan on medium. Add flour. Heat and stir for 1 minute.

Slowly add milk, stirring constantly with whisk, until smooth. Heat and stir for about 5 minutes until boiling and thickened. Remove from heat.

Add cheese. Stir until smooth. Add to noodles.

Add chicken and ham. Stir until coated. Spread evenly in a 9x13 inch baking dish. Sprinkle bread crumb mixture over top. Bake in 375 degree oven for about 25 minutes until bubbling and edges are starting to brown. Let stand for 10 minutes before serving.
