1pkg. of Jimmy Dean breakfast sausage
1 small yellow onions sliced chopped small
1 bell pepper chopped small
1 small tomato seeded and chopped
3 green onions, sliced
2 c. half-and-half or milk
4-6 eggs
1 c. of all purpose baking mix
1 package of shredded cheese

Directions:
Directions:
Preheat oven to 400º. Lightly grease 13x9 inch baking pan.
Cook sausage, crumble and drain. Place it in the pan.
Sauté yellow onions and bell pepper and add in the pan with sausage.
Layer chopped tomato on top and cheese (as much as you like).
Beat eggs, half-and-half and baking mix with whisk until well blended and pour over cheese.
Bake 20-30 minutes or until knife inserted in center comes out clean. Add more cheese immediately after pulling it out of the oven.

Cool for 5 min. and cut into squares add topping (salsa). Recommend serving with hash browns and or potatoes.

This recipe came from a friend of the family.
On Christmas Eve all of my family (Grandparents, Aunts, Uncles) spend the night with us. On Christmas morning we make this for Christmas breakfast.
