"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
3 pounds chicken pieces - thighs and breasts (best with bone-in pieces but skin removed)
1 cup Kellogg's Corn Flake Crumbs
2 tablespoons margarine or butter melted
Evaporated fat free milk OR 2 eggs beaten with a little water added

Directions:
Directions:
Mix melted margarine with corn flake crumbs. Use a fork to mix, pressing fork into mixture until all the crumbs are coated. Can mix this up on a plate. Put crumbs in large ziplock baggie.

Dip chicken pieces in the evaporated milk or egg mixture. Put chicken pieces one at a time into ziplock bag and shake until chicken piece is coated with crumbs. Repeat with all pieces of chicken.

Put chicken in single layer in a shallow baking ban coated with cooking spray (or can line pan with tin foil for easy clean-up). Season with season salt and pepper.

Bake at 375 for 1 hour or until chicken is cooked through (no longer pink, juices clear color). Do not cover pan or turn chicken while baking.
