2 cups Hodgson Mill 50/50 Wheat Flour (Can substitute 1/4 cup oat bran for 1/4 cup of the flour)
1 pkg. Hodgson Mill Active Dry Yeast
3 TBSP sugar (can decrease to 1 TBSP)
2 tsp grated orange rind
1/2 tsp salt
1/2 cup milk
1/4 cup water
1/4 cup Canola oil (or 2TBSP apple juice concentrate + 2 TBSP Canola Oil)
1 egg
1/2 cup chopped walnuts

TOPPING:
3 TBSP sugar
2 tsp grated orange rind
1 tsp orange juice

In large mixing bowl, combine 1 cup 50/50 flour, yeast, 3 TBSP sugar, 2 tsp orange rind and salt; mix well. In saucepan, heat water, milk and oil until warm (120º-130º F). Add to flour mixture.Add egg. Blend at low speed until moistened; beat 2 minutes at medium speed. By hand, gradually stir in nuts and remaining flour to make soft batter. Spoon batter into greased muffin tins or cups.

Prepare topping: Combine sugar, orange rind and orange juices. Spoon topping on batter. Cover; let rise in warm place about 15 minutes. Bake at 375 º F for 15 to 20 minutes. Serve warm.
