2 c. flour
1/3 c. brown sugar
1 1/2 T. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. nutmeg
1/2 c. cold vegan butter (like Earth Balance)
1/2 c. pumpkin puree
3-5 T. cold almond milk (Begin with 3 T., add a little more until it resembles a stiff dough.)
1 T. molasses
1 T. cornstarch
1 tsp. vanilla
2/3 c. powdered sugar (for the drizzle)
2 T. maple syrup (for the drizzle)
1 T. almond milk (for the drizzle)
crystallized sugar (optional)

Step 1
In a mixing bowl, combine flour, sugar, baking powder, salt, spices, and cold butter. Work the butter throughout the mixture with your fingers until everything is evenly distributed and crumbly. Place this mixing bowl in the refrigerator while you prep remaining ingredients.
Step 2
In a separate bowl, combine remaining wet ingredients: pumpkin puree and almond milk.
Step 3
Preheat your oven to 400 degrees.
Step 4
Remove refrigerated ingredients and combine wet ingredients with the dry (or semi-dry) ingredients. Knead everything together until a nice dough forms, and turn it out onto a lightly floured surface.
Step 5
Using your fingers, press the dough into a rectangle--approximately 10" X 7".
Step 6
Using a knife or pizza cutter, cut the dough into 16 equal wedge shaped pieces. Then, place them on 2 greased cookie sheets.
Step 7
Sprinkle crystallized sugar generously over the tops of the scones. (optional)
Step 8
Bake scones at 400 degrees for 8-10 minutes, or until a toothpick comes out clean and the bottoms are golden brown.
Step 9
Drizzle the frosting/glaze generously over the tops of the scones, and serve!
