12 oz Eagle Brand Sweetened Condensed Milk
1/3 c Lemon Juice
8 oz Cream Cheese
1 tsp Vanilla
Graham Cracker Crust
Cherry or Strawberry Pie Filling

***Make sure cream cheese is extremely softened. Recommend setting it out for a couple hours prior to use or filling will be lumpy. In a pinch I have softened it in a microwave, but you have to be very diligent not to melt it, as it has to partially reset up later.

Mix first 4 ingredients in a bowl with a hand mixer until thoroughly blended and then continue to mix for another few minutes until the mixture is the consistency of cake batter. Then pour into Graham Cracker crust and refrigerate for 1-2 hours.

Slowly spoon Pie Filling evenly over the top of the pie. You will not be able to pour it and spread because it will stick to the cream mixture.

Place back in refrigerator until ready to eat.

*Personal Note: After watching Granny make this over Thanksgiving, I believe she used a little more lemon juice and a little more vanilla. She free hand pours so it’s hard to say. But it made a big difference from when I make it.
