1 head romaine lettuce, cut in bite-size pieces
4 eggs, hard-boiled
2 6 oz. cans good quality tuna in oil, drained and flaked gently
1 large tomato cut in 1/4" slices
1/2 red onion sliced thinly
1/2 lb. green beans, blanched
2 large red potatoes, cubed and boiled
kosher salt and freshly ground black pepper

Lemon-Olive Vinaigrette
1 t. Dijon mustard
1/2 lemon, juiced
1/2 t. white wine vinegar
1/4 c. extra-virgin olive oil
1 T. chopped fresh thyme
1/2 c. oil cured olives (nicoise)
kosher salt and freshly ground pepper

In a small bowl, whisk together the mustard, lemon juice, and vinegar. Drizzle in the olive oil and whisk to create an emulsion. Add the thyme, olives and salt and pepper, to taste. Let sit at least 10 minutes to marry the flavors.
Combine the potatoes, green beans and red onion in a small bowl. Drizzle half of the vinaigrette into the bowl and stir gently.
On a large platter place the romaine lettuce in one layer. Place the tuna in the center and place the other ingredients, including the potato mixture decoratively around the center. Drizzle with the remaining vinaigrette and serve.
