2 medium butternut squash
7 red peppers
1/3 cup butter
3 large onions, chopped
4 - 6 cups chicken broth
salt/pepper

Directions:
Directions:
Cut, peel and seed squash and put into 1" cubes. Coarsely chopped red peppers.
Melt butter. Add onion till softened. Add squash, then peppers. Pour in broth.
Cover and simmer over med heat. Reduce till peppers are cooked. Place small amounts
into blender till smooth. Garnish with thyme or chives.
