2 cups Ore-Ida Potatoes O'Brien
4 Tablespoons Butter
6 eggs, beaten
1 small onion, chopped
2 Roma tomatoes, chopped
1 green pepper, chopped
6 Tablespoons milk
1 teaspoon salt
1 teaspoon black pepper
1/2 cup Pepper Jack Cheese
1/2 cup Mild Cheddar Cheese, Shredded
8 patty mild sausages, torn into pieces
4 slices, 1/2 cup bacon, crumbled

Directions:
Directions:
1. Melt butter in skillet, add frozen potatoes, cook until tender, about five minutes. Remove to bowl.
2. Add bacon to skillet and cook until crispy. Remove bacon to cool. Add patty sausage to skillet and cook until browned. Remove to a plate to cool with bacon.
3. Add onion and green pepper. Cook until soft. Add to bowl with potatoes.
4. Stir together eggs, salt, pepper, milk and pepper jack cheese. Add to potato bowl.
5. Crumble bacon and sausage into bow with potatoes. Pour into a skillet and cook for 5 minutes, stirring frequently. Remove from heat.
6. Stir in chopped tomatoes.
7. Pour mixture into a round or baking pan or dish sprayed with Pam. Pour egg-cheese mixture over potato mixture. Cook until eggs are set, about thirty minutes. Sprinkle with cheddar cheese and serve immediately.
