4 grilled seasoned chicken breasts
4 - 10 oz cans Old El Paso Mild Green Chile enchilada sauce
8 0z sour cream
3 cups Mexican blend
10-12 flour fajita shells
4 T olive oil

Directions:
Directions:
Season chicken breast with fajita seasoning (DL Jardines) and grill. Shred chicken and set aside.
Heat 2 T of olive oil in fry pan, add one tortilla at a time, frying for 10 seconds on each side. Do not let the tortillas get hard. Put tortillas on plate with paper towels separating tortillas to remove excess oil. Set aside.
Coat the bottom of a oblong cooking dish with enchilada sauce (1/2-1 can).
Filling - Put enchilada sauce in a pie pan to dip tortillas. Refill as necessary but keep at least one can for topping. Fill tortilla with chicken and cheese and roll. Put enchiladas in oblong pan. Top with mixture of sour cream and remaining sauce. Sprinkle with cheese.
Cook for 30 minutes and serve.
