1 medium chopped onion
4 T butter or margarine
1 or 2 jalapeno peppers, seeded and finely diced
4 cloves of garlic, crushed (or 2 tsp of minced garlic in a jar)
3 large carrots, chopped
6 celery ribs, chopped
1 lb chicken breasts, diced
1 tsp cumin
1 tsp chili powder
1 tsp salt
1 tsp lemon pepper
a few shakes of tabasco (6 drops or shakes)
1/2 cup flour
5 -10 oz cans of chicken broth
2 - 14 oz cans of chopped/diced tomatoes

Directions:
Directions:
Saute together onion, butter, pepper, garlic, carrots, celery, chicken, cumin, chili powder, salt, lemon pepper and tabasco sauce in large skillet.

In a large pot, add flour with 1/2 can of chicken broth and whisk to thicken. When smooth, add rest of chicken broth and tomatoes. Add the vegetable/chicken mixture to pot. Bring to boil, then reduce to simmer. Cook on low for a few hours.

Serve with fried tortillas, shredded colby/jack cheese, sour cream and green onions.
