1 whole Chicken

1 tbsp and 3/4 tsp Kosher salt
3/4 tsp crushed black pepper
3 tbsp olive oil
1 lemon and onion

Directions:

Wash chicken and dry well inside and out.
Rub the chicken with oil, then cover with salt and pepper.
Place the lemon, cut in 1/2 and onion cut in 1/2 into the chicken
cavity.

Allow the last final pound to cook out of the oven covered with foil. Resting
it for 10 mins. to keep it nice and moist.
