3 large navel oranges
1 head fennel, very thinly sliced into matchsticks
1 medium red onion, sliced very thinly, julienne style
1 clove garlic, minced
1/4 c. extra-virgin olive oil
3 T. white wine vinegar
3/4 c. oil-cured olives pitted and halved
1 t. kosher salt
1/4 t. freshly ground pepper
1/2 t. dried oregano
Arugula or romaine

With a very sharp knife, peel oranges removing white pith and slice in 1/4" rounds Place in a dish and reserve any accumulated juices separately.
Place the fennel, red onion, and black olives in a salad bowl.
Combine the red wine vinegar, garlic, reserved orange juice, oregano, salt and pepper. Add the oil in a thin steady stream whisking until emulsified. Combine with the fennel, red onion and black olives. Allow to sit for 30 minutes.
Place orange slices in bottom of a container, add fennel mixture and cover. Let sit until ready to serve.
To serve, arrange arugula or romaine on a platter, place the orange slices on the salad and dress with the fennel mixture.
