8 oz package of cream cheese
1 egg
1 tsp. vanilla extract
1/3 c. brown sugar

Streusel Topping
41/2 T. all purpose flour
5 T. white sugar
3/4 tsp. cinnamon
3 T. butter
3 T.chopped pecans

Muffins
2 1/2 c.all purpose flour
2 cups white sugar
2 tsp. baking powder
2 teaspoons ground cinnamon
1/4 tsp EACH cloves,nutmeg.allspice
1/2 tsp salt
2 eggs
1 1/3 c. canned pumpkin
1/3 cup olive oil
2 tsp. vanilla extract

.Preheat oven to 375º Grease and flour 18 muffin cups
#1. Filling- In medium bowl ,beat cream cheese until soft. Add egg,vanilla and brown sugar. Beat until smooth,then set aside.

#2 Streusel- Mix flour,sugar,cinnamon and pecans. Add butter and cut in with fork until crumbly. Set aside

# 3. Muffins-In a large bowl, sift together flour,sugar,baking powder, cinnamon and salt. Make a well in center of flour mixture add eggs pumpkin,olive oil. and vanilla.-Beat until smooth

# 4. Place small amount of batter in each prepared muffin cup enough to cover the bottom . Add one tablespoon cream cheese mixture right in the middle of the cup . Use remaining batter placing on top of each muffin-try to completely cover the cream cheese . Sprinkle the streusel topping.
# 5. Bake @ 375º for 20-25 minutes

I just found this recipe -They were so good I just had to include them.
Make sure that the batter covers the tablespoon of cream cheese mixture in each muffin cup.
