1 cup soft margarine
3 cups brown sugar
2 eggs
1 tsp vanilla
2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 cups rolled oats
1 cup flaked coconut

Directions:
Directions:
1) Beat margarine, brown sugar, eggs, and vanilla until fluffy.
2) Add all remaining ingredients and stir in coconut and rolled oats.
3) Drop by teaspoon and flatten with fork.
4) Bake at 375 º for about 10 minutes.

These are an all time favorite of my husband Toads! He says it was the smell of these coming out of the oven and sharing them with his Grandma over conservation and a glass of cold milk that brought back wonderful childhood memories!
