Ingredients:  
1 lb dried yellow split peas, washed and sorted to remove defective bits.
1 large yellow onion finely diced
2 medium carrots finely diced
2 medium celery stalks finely diced
1 clove garlic, minced
1 Tbsp. chopped fresh thyme (double if using dried)
1 bayleaf
2 quarts of chicken stock plus extra set aside to thin soup
2 cups cooked ham, diced into 1/2 inch cubes
Salt and pepper to taste

Directions:
Directions:
In a large stock pot, add split peas, vegetables, thyme, bay leaf, and chicken stock.
Bring to a boil.
Reduce heat and let simmer partially covered, stirring occasionally until the vegetables are tender, the peas have broken down, and the soup has thickened ( approx. 2.5-3 hrs).
Add ham and cook until it is warmed right through. Season with salt and pepper to taste.

The soup thickens when stored in the refrigerator. When reheating add more chicken broth to thin it out.

Freezes well.
