1 cup butter, softened
1/2 cup packed brown sugar
1/2 cup granulated sugar
1 large egg
1 tsp. vanilla extract
1/8 tsp. salt
2 cups white or whole wheat flour
1 tsp. baking powder
1/2 tsp. baking soda
1 cup chocolate chips (or any kind you like)
1 cup mint chips or white chips
1 cup rolled oats

Directions:

Preheat oven to 350 degrees F
Beat first 3 ingredients in a large bowl until light and fluffy. Add next 3 ingredients, beat well. In a small bowl mix next 3 ingredients. Add 1/2 the flour mixture to the butter mixture. Mix well, add remaining flour mixture. Mix until no dry flour remains. add the next 3 ingredients, mix well. Grease cookie sheet, or use parchment paper. Drop cookies using 1 tbsp. 2 inches apart. One sheet at a time bake in oven for about 10 mins until bottoms are golden brown. Let cool on a cookie sheet for 5 minutes before removing to wire rack. Enjoy.
