1-1/4 cup dark raisins
1/3 cup walnuts, chopped
1/2 tsp. cinnamon
1-1/2 Tbsp. sugar
1/3 cup apple jelly

Cookie Dough
2-1/3 cups all purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 oz. unsalted butter, softened
2 oz. cream cheese, softened
1/2 cup brown sugar. packed
1/2 cup sugar
1 egg
1 Tbsp. vanilla extract
1-1/2 Tbsp. milk

To prepare filling add the filling ingredients to a bowl and mix with a spatula until evenly mixed. Place in air tight container and refrigerate for 8 hours or overnight.

Cookie dough. combine flour, baking powder, baking soda, and salt. Cream together butter, cream cheese, and both sugars and egg and vanilla and mix good then mix the flour mixture in two batches alternating with the milk. Remove and wrap in plastic wrap and refrigerate for 6 hours or overnight.

Pre-heat oven to 350, line cookie sheets with parchment paper.

On a lightly floured surface roll out the chilled dough until it is 1/8 inch thick. You need two round cookie cutters one 2-1/2 and one 3 inches. Cut dough with cutters.

Place the 2-1/2 circles on the prepared cookie sheets. Spoon a heaping Tbsp. of the filling in the middle of each circle. With a little bit of water lightly wit the edges of the cookie with our fingers. Top each with the 3 inch cookie dough. Seal the edges together pressing with your fingers and cut a small slit right over the filling of each cookie.

Bake for 14-16 minutes or until lightly brown. Remove and cool.
