4 large pork hocks
1/2 pound dry kidney beans
1 bay leaf
2 large onions, chopped
Salt and pepper
1 1/2 - 2 tablespoons butter
Small piece of salt pork, chopped fine (optional)
Pinch of dried rosemary
3/4 cup white rice
Parmesan cheese

Directions:

Wash and soak kidney beans overnight.

In a 2 quart pan, boil the pork hocks in water filled 3/4 full.

Add beans, bay leaf, and 1 onion. Season broth with salt and pepper. Cook covered for about 1-1 1/2 hours until beans are done.

In a large skillet combine butter, salt pork, and 1 onion. Brown salt pork and onion and add a pinch of rosemary.

Add contents of the skillet and dry rice to the broth.

Cook for about 25 minutes until rice is cooked.

Serve with Parmesan cheese.
