2 pounds tripe, cut into small pieces
2 medium onions, diced
2 medium potatoes, diced
2 good size carrots, diced
2 large stalks celery with leaves, diced
12 ounces V-8 Juice
Salt and pepper to taste
2 quarts water or beef broth

Directions:
Directions:
If water is used, add 3 teaspoons of beef bouillon.

If tripe is thin, add everything all at once to pot. If not, cook tripe for 30-60 minutes, then add vegetables and cook until done, about 1 hour.

According to Ruby Vertino, cook tripe in boiling water, then change water once before adding vegetables.
