2 T margarine or butter
4 skinless, boneless chicken breast halves
1 pkg.(6.9oz) Rice-A-Roni Chicken flavor
1 T minced fresh basil or 1 t dried basil
2 c fresh broccoli flowerets or 1 10oz pkg. frozen chopped broccoli, thawed
1 medium tomato, chopped
1 c shredded mozzarella cheese

In large skillet,melt margarine over medium high heat. Add chicken: cook 2 minutes on each side or until browned Remove from skillet, set aside, reserving drippings. In same skillet, saute rice-vermicelli mix in drippings over medium heat until vermicelli is golden brown. Stir in 21/2 cups water, contents of seasoning packet and basil. Place chicken over rice mixture: bring to boil over high heat. Cover, reduce heat to low. Simmer 15 minutes. Add broccoli and tomato. Cover; continue to simmer 5 more minutes or until liquid is absorbed and chicken is no longer pink inside. Sprinkle with cheese
