Ingredient for this Italian-American favorite are available at TJs and Whole Foods. The dough can be frozen and defrosted before cooking.

1 lb plain pizza dough
20 oz frozen chopped spinach-defrosted with all extra water squeezed out 
1/3 c  sliced canned black olives
3 cloves of garlic, finely chopped
3 T extra virgin olive oil
6 oz fresh mozzarella cheese sliced
(Optional- 12 slices pepperoni)

Preheat oven to 450º. A hot oven is essential.
Mix spinach, oil, garlic and olives. Add plenty of salt and pepper to taste.
On a lightly floured surface, divide dough into 4 pieces. Roll each piece into a rough circle approximately 10 inches wide. Spread 1/4 of the filling in the center of the circle leaving a 1-inch border. Place 1/4 of the cheese (and pepperoni) on top of the spinach. Fold dough in half and seal the edge to create a calzone/turnover shape.  Transfer Pies to baking pan. Brush top with olive oil.
Bake 8-10 minutes until the top is golden brown.
