36 medium tomatoes
3 large onions
2 large red peppers
2 green peppers
2 whole heads of garlic
3 cups chopped celery
1/2 cup pickling salt
1 cup sugar
2 tsp cayenne pepper
1 1/2 cups vinegar
2 - 10 oz cans of tomato sauce
1 handful jalapeno peppers (or tsp crushed chili peppers depending on taste).

Directions:
Skin the tomatoes by dipping in boiling water then ice water. cut into 6-8 pieces each. Mix all ingredients in large pot and simmer for 1 hour. remove from heat, let stand for 10 minutes and skim off as much liquid as possible. Pour into pint size jars, seal and store.
