2 c. boiling water
5 tsp. baking soda
2 c. chopped dates
1 c. shortening
2 c. sugar
4 beaten eggs
1 qt. buttermilk
4 c. Fiber One buds
4 c. bran flakes
5 c. flour
1 tsp. salt
1 c. nuts (optional)

Directions:
Directions:
Boil 2 cups water in medium sauce pan. Remove from heat and cool slightly. Add baking soda, dates and Fiber One cereal. Set aside.

Cream together shortening and sugar. Then add eggs. Slowly add the buttermilk. Stir in the bran flakes and the dates and Fiber One from the saucepan.

Add flour and salt. Stir in nuts if desired. Fill greased muffin tins 1/2-3/4 full and bake at 375º for 20 min.

Store the unused, unbaked, batter in an airtight container in the refrigerator for up to 6 weeks. When you bake the next batch of muffins, don't stir the batter again, just dish it into the muffin tins.
