1 1/2 c. egg whites
1 1/2 c. sugar
1 c. cake flour
1 1/2 tsp. cream of tarter
1/2 tsp. salt
1 tsp. vanilla
1/2 tsp. almond extract

Directions:
Directions:
Beat egg whites, cream of tarter and flavorings until egg whites are stiff and moist. Beat in 1 1/4 c. of sugar. Do this 1 tbsp. at a time beating only until no dry sugar is visible. Sift remaining 1/4 c. sugar with the flour. Sprinkle sugar and flour mixture over the egg whites 1 tbsp. at a time mixing after each addition until no flour is visible. Pour batter into ungreased tube pan. Run knife back and forth to release air bubbles. Bake in a preheated oven at 425º for 15-18 minutes. Turn off heat at once and leave cake in oven for 10 minutes longer. Remove cake from oven and invert pan on rack until thoroughly cool. The high temperature leaves an uneven top but the texture is excellent and the cake is moist.
