White Bean Chicken Chili Recipe

1 tablespoon olive oil

4 skinless, boneless chicken breast halves cubed

1 onion chopped

2 to 3 green/yellow/red peppers

3 cloves garlic crushed

1 (4 oz) can mild diced jalapeņo peppers

1 (4 oz) can chopped green chile peppers

2 teaspoons ground cumin

1 teaspoon dried oregano

1 teaspoon ground cayenne pepper

2 (14.5 oz) cans chicken broth

1 cup shredded Monterey jack cheese

3 (15 oz) cans white beans (mash one can)

2 cans of garbanzo beans.

(optional, 1 lime, sour cream, avocado, tortilla chips, cornbread)

Directions:
Boil chicken breasts - recommend doing it with the chicken broth for added flavor. Shred or cube.

In blender, blend two cans of garbanzo beans and one of the cans of white beans (don't drain before blending).

Heat oil in a large saucepan over medium-low heat. Slowly cook onion and peppers until tender. Mix in garlic, jalapeņo, chile peppers, cumin, oregano, and cayenne. Continue to cook and stir the mixture until tender, about 3 minutes.

Mix in the chicken broth, chicken and white beans. Simmer 15 minutes stirring occasionally.

Remove from heat.

Top with cheese, sour cream, green onions, avocado, and tortilla chips / cornbread for the bottom of the bowl.

(optional- add the juice from half a lime while cook, top with the remaining juice)

Great chili that has been a hit with the entire family and friends for several years. It has been my go-to chili for large parties as it makes a lot of chili and freezes well.
