4-6 Boneless Skinless Chicken Breast
1 8 oz. pkg frozen spinach
2-3 T. butter
1/2 c. onion
1 8 oz pkg sliced mushrooms
1/4-1/2 c. flour
1 c. milk
1 T. olive oil
2 C. rice
water (if necessary)
1/4 c. Parmesan Cheese

Preheat oven to 350ºF. In sauce pan combined butter and olive oil and onion. Sauté for 5-10 minutes. Add Flour to make a roux ( like gravy) when, it starts browning add milk and water until gravy consistency. Add spinach and mushrooms. In a 9x13 pan place chicken breast and pour sauce over top. Sprinkle top with parmesan cheese cover with foil and bake for 1 hour. Make rice to package directions. Serve over rice.
