Preheat oven to 450 degrees.
2 lbs Chuck Steak, cut up in package ( dry off)
Brown meat in Olive Oil – remove with spoon put in dutch oven
In same oil sauté about 10 minutes sliced carrots and small onion cut up
Remove, add to meat.
Sprinkle 2 tbsp flour over meat and vegetables and mix
Cook 450 degree oven for 4 minutes
Stir and leave another 4 minutes.
Remove and lower over temperature to 200 degrees.
Add 1 cup wine
2 cans beef broth no fat, no salt
Stir in 1 tablespoon tomato paste
2 cloves mashed garlic
˝ tsp thyme
crumbled bay leaf

Cover and put foil on top also the cover on top of foil
Simmer 1˝ hours in 200 degree oven

Saute mushrooms in olive oil & little butter if desired
Cook till brown
Small white onions boil for 2 mins then place in cold water, take off skins keeping onions whole.
Saute in butter till brown.
When meat is done move to plate. Put all gravy through strainer,return liquid to pot with mushrooms and strained gravy. Add cooked potatoes and carrots to gravy if desired warm before serving.
