Pudding:
8 slices day old bread
4 eggs-beaten
2 c milk
2 Tbsp melted butter or margarine
1/2 c sugar
1 tsp Vanilla
Cinnamon/Sugar mixture @ 3Tbsp and 1 tsp cinnamon
Raisins ( if desired)

Sauce:
1 can evaporated milk
1c milk
1c sugar
2 Tbsp. brown sugar
3 Tbsp. butter or margarine
1 ½ Tbsp. cornstarch
1 tsp. rum flavor(add more if desired)

Pudding:
Cut crusts off bread, butter lightly. Place on cookie sheet and toast lightly in 350*F oven. Layer toasted bread in large loaf pan or 5 quart casserole dish. Sprinkle cinnamon/sugar mixture and raisins between each layer.
Mix remaining ingredients, pour over bread and bake immediately at 350*F for 45min or until solid.

Sauce:
In heavy saucepan, add milk, sugar, and butter. Cook until hot over medium-high heat. Dissolve cornstarch in small amount of water and add to hot mixture. Stir until thickens. Remove from heat and add rum flavor and food color. Serve over bread pudding.
