2 oz. Goslings Black Seal Rum (or other dark rum)
3 to 8 oz Ginger Beer (Such as Barrit's)*
1/4 lime wedge

*Sold at our local grocery Colella's here in Hopkinton, look around you may be surprised where you can find it. If not in your grocery store check your package/liquor stores. Ginger Beer is strongly flavored sweet/spicy (NOT THE SAME AS GINGER ALE). It is non-alcoholic.

Fill a highball or collins glass with ice. Pour rum, ginger beer and garnish with lime wedge. (I like to squeeze the lime over the ice first)
NOTE: experiment with the amount of ginger beer, recipes vary widely.

Our good friends the Landers introduced us to Polo, and this traditional Polo drink... Highly recommend Newport Polo as a wonderful weekend excursion. Pack up a classy tailgate party, wear your sundresses and polo shirts, spread out your blankets and watch in awe as the horses and athletes compete on the field feet away from you.
