2 lb chuck roast
3 cups water
1 tsp salt
1 medium onion, cut in half and remove after meat is cooked
3/4 cup rice, soak a few hours
2 bouillon cubes
2 cups water

Directions:
Brown meat in a fry pan with a little butter. Then cook beef, water, onion, salt & pepper in a crockpot on high for 4-5 hrs or low for 7-8 hrs. Prepare rice separately according to package directions (do not cook rice in broth). Pull meat from crockpot and shred. Add the cooked rice to the broth. Dissolve 2 bouillon cubes in some of the hot broth then add to soup. Add up to 2 more cups water depending on how thick you like your soup. Add the shredded beef back into the soup. See note below on how to serve this soup.

Grandma always buttered both sides of the bread and fried the bread in a pan till both sides are toasted a golden brown. Then she would tear up the toasted bread and put it on the bottom of each bowl then pour the soup over top. The bread just gives this extra layer of wonderful flavor. You have to try it like this! I wouldn't eat it any other way!
