olive oil
1 lb. loose Italian hot sausage
1 large onion
2 cloves garlic chopped
1 tsp basil
1 tsp. oregano
2 bay leaves
1(6oz) can tomato paste
1 (28oz can whole tomatoes chopped*
1 cup uncooked penne pasta
1/2 cup fresh chopped parsley or (2 T. dried) )
2 cans red kidney beans, drained
8-10 cups of water
Freshly grated Parmesan cheese(garnish)

Directions:
Cook sausage (breaking into pieces),onion and garlic in olive oil until sausage is done ,about 10 minutes. Add basil,oregano and bay leaves. Add tomato paste and chopped tomatoes with liquid and cook another 5 minutes or so. Add water and kidney beans,bring to a full boil and add pasta. If soup is too thick for your liking add a little more water. For a variation decrease water by one cup and add one cup milk.

*For cutting whole tomatoes I use kitchen shears and cut them in the can.

This is my everyday go to soup-it freezes well . I save plastic containers from sour cream,ricotta and cottage cheese to use for freezing as tomato based soups and sauces etch into my snap lock containers but not into the saved plastic containers. Go figure!
