12 oz bag bread cubes
1/2 medium onion, minced
3-4 stems celery, minced
2 Tbsp parsley
1/2 lb butter, melted
1 1/2 cups milk or enough to moisten
2 eggs, beaten
1 1/2 cups mashed potatoes
Salt & pepper to taste

Directions:
Directions:
Fill large mixing bowl with bread cubes. Sauté onions and celery in 1 stick of butter and add to bread. Add the parsley, milk, eggs, mashed potatoes, salt & pepper to the bread and mix well. Use ice cream scoop to form into balls. Place side by side in buttered dish. Pour the other stick of melted butter over top of the balls. Bake uncovered for 20 minutes at 350º. These can be frozen.
