1 to 1 1/2 lbs Ground Chuck
1 egg
Salt to taste
1/2 slice white bread
2 T milk
3 T tomato ketchup or tomato sauce
1/2 bell pepper
1/2 medium onion

Vegetables: potatoes, onions, carrots

Directions:
Directions:
Mix ground chuck, egg, bread crumbs soaked in the milk, grated bell pepper, grated onion, tomato ketchup or tomato sauce. Form in loaf and bake at 350 degrees for about 45 minutes. In the meantime. cut up potatoes, onions, and carrots in chunks and pre-boil in water on top of stove til about half done. I add a little tomato sauce or ketchup to the boiled water since it will go in the meatoaf with vegetables. Spoon vegetables around the half done meatloaf and pour some of the liquid from vegetables in also. I cook on high heat for about 20 minutes so vegetables will start cooking fast and then reduce heat back to 350 degrees. Cook til meatloaf and vegetables are well done.
