2 cups All Purpose Flour
2 tbsp granulated sugar
1 tbsp baking powder
1/4 tsp salt
1/2 cup butter
3/4 cup raisings
2 eggs
1/2 cup milk
1/2 cup thick strawberry jam
Sugar for top

Directions:
Directions:
-Preheat oven to 425 F
-Spray an 8" round cake pan with cooking spray
-Combine flour, sugar, baking powder, and salt in mixing bowl.
-Cut in butter with pastry blender to coarse crumbs.
-Stir in raisins.
-Beat eggs and milk together. Stir into dry ingredients until moistened.
-Pat half of dough on bottom and 1/2" up sides of greased pan. Spread jam on top. Spread remaining dough on top. Sprinkle sugar lightly on top.
-Bake at 425 F for 20-25 minutes, or until golden
